1910: Julien Guyot presents his first cuvée to the monks of Cluny, who decide to give him the keys of the Cruzille castle for 5 generations. Well almost ... In fact, his family bought it in 1952. Neither before nor after, Le Clos didn't know chemistry. From the beginning, the vines were naturally treated without using sulfur. The vinifications are as simple as possible: indigenous yeasts, neither sulfur, nor enzymes. The wooden vats were previously brushed with Burgundy pomace "to awaken the yeast flower". Manual harvest in crates, careful sorting, semi-carbonic maceration according to the mille feuille principle. The reds are aged in barrels or vats (not new) at least until Easter. Lunar cycles are taken into account for operations in the cellar, in order to avoid unnecessary manipulations. Bottling is done only when the wines are ready, of course.
