The grape harvest took place between 12 and 14 September strictly by hand. The grapes, once transported to the cellar, were subjected to soft pressing into round grains. The must obtained was cold decanted for 24 hours. Subsequently the fermentation took place in steel barrels at a controlled temperature, kept constant between 18 and 20 ° C, for a duration of about two weeks. The wine is then aged on its lees for 6 months during which frequent “battonage” are carried out.
Characterized by an extraordinary elegance. To the nose, the delicate notes of bread crust blend harmoniously with the fruity notes reminiscent of apples and citrus fruits. On the palate it is characterized by a remarkable and soft body that accompanies a pleasant flavor.
It goes well with risotto with first fruits and substantial and elaborate first courses. Particularly suitable to accompany seafood and crustaceans. It is recommended to serve at a temperature of 10 ° C.
