Vineyard: Cumiti vineyard, Contrada Allegracore, Randazzo, North Etna - 1.98 hectares - Average age of the vines 50 years - Density 5,000 plants / hectare - Altitude 700 meters above sea level - North exposure
Soil and subsoil: Lava / volcanic
Vinification: Manual harvest in mid-October (yields 40 qt / ha). Mechanical destemming and crushing. Spontaneous fermentation. Maceration 15 days. with replacements. No filtration, clarification or alteration of natural oenological parameters. Aging 12 months in stainless steel tanks, plus 6 months in the bottle.
Sulphites: free 6-9 mg / l; total 12-27 mg / l.
